
1 can each of: black eyed peas, pinto beans, black beans, show peg corn. 1 chopped cup each of: onion, green pepper, celery. 1 small jar of pimentos. 3/4 cup each of sugar and cider vinegar. 1/2 cup of olive oil.
Mix vinegar and sugar until dissolved. Then stir in oil. Drain and rinse everything else and mix in. Refrigerate 2-4 hours and serve with Tostito scoops. (Feel free to drain out some of the excess oil mix).
